Ingredients:
- 1 head broccoli
- 1 small red onion
- 1 jar (approx. 200g) Castello Greek Style Cheese, crumbled (or substitute with feta, cut into small cubes)
- ½ jar (about 100g) sundried tomato strips, chopped into small pieces
- ¼ cup dried cranberries
- 2 tablespoons roasted pine nuts (may be substituted with whatever nuts you have on hand)
- 2 tablespoons sunflower seeds
- Thai Style Salad Dressing (I recommend Mae Ploy Thai Style Salad Dressing)

Method:
- Using your Saladmaster food processor, chop the broccoli with cone #4 for perfect small florets. Chop the red onion finely with cone #2.
- In a large bowl, mix the chopped broccoli, red onion, sundried tomatoes, and cranberries.
- Crumble the Greek style cheese over the salad or use small cubes of feta if you prefer a slightly saltier, creamier taste.
- Sprinkle roasted pine nuts and sunflower seeds over the top. For a twist, swap in chopped walnuts (use cone #3 on your Saladmaster processor).
- Drizzle the Thai Style Salad Dressing over the salad, tossing gently to coat all ingredients.
