This hearty soup is a delightful combination of being super tasty AND packed with nutrition! It earned its name due to its high iron content, which is perfect for new and expectant mothers.

Recipe Description:

Mother’s Diet is a delicious and light dish that’s not only a family favourite but also packed with health benefits, especially for new mums whose iron and vitamin needs are especially high. This recipe is particularly special to me as it was passed down to me by my Mother-in-law, and has been a favourite meal for my own family over the decades. It is extremely quick, easy and hands-off to prepare, making it the perfect weeknight meal for busy mums.

  • Beef Mince: Rich in iron, which is crucial for replenishing iron stores after childbirth and boosting energy levels. It also provides high-quality protein for muscle repair and overall health.
  • Bok Choy: An excellent source of calcium and vitamins A and C, bok choy supports bone health, boosts the immune system, and aids in iron absorption.
  • Red Onion: Contains antioxidants and anti-inflammatory compounds that can help reduce inflammation and support overall health.
  • Tomato: Rich in vitamin C, tomatoes enhance iron absorption from the beef and bok choy, and their antioxidants support heart health.
  • Ginger: Known for its anti-nausea properties and digestive benefits, ginger can help soothe the stomach and improve overall digestion.
  • Oyster Sauce and Fish Sauce: These add depth of flavour while contributing minimal sodium, enhancing taste without overwhelming the dish with salt.
  • Beef Stock: Adds additional nutrients and flavour, enriching the dish with minerals and enhancing the overall taste experience.

This recipe is not only a hit with the whole family but also offers a nutritious boost, making it an excellent choice for maintaining health and vitality year-round.

Utensils Used:
  • Saladmaster Food Processor, Cones #1 and #3. 
  • 7 Qt Roaster (the perfect size for our indicated quantities. You may size up/down in the Saladmaster pot you use, depending on how much you are cooking).
Ingredients:
  • 1 kg Beef mince (may be substituted for pork, chicken or lamb mince)
  • 1 bunch Bok Choy (may be substituted with silverbeet, baby spinach)
  • Red onion
  • Tomato
  • Ginger
  • 2 tbs oyster sauce
  • 1 tbs fish sauce
  • 1 litre beef stock
  • Salt and pepper to taste
  • Serving suggestion: serve with your preferred type of rice. 
Method:
  1. Roughly chop stems of bok choy into thin slices. Separate the lighter coloured lower part of the stem from the green leafy top part. Set aside.
  2. Use Cone #3 of the Saladmaster Food Processor to chop red onion and tomato. These can be processed straight into your cooking pot.
  3. Use Cone #1 to finely chop ginger straight into your cooking pot. Add quantity as per your personal preference.
  4. Add beef to pot and top with oyster sauce, fish sauce, beef stock, salt and pepper. Mix all together. Place most of the crunchy, lower stems of the bok choy on top of the soupy mixture. Place the lid on your pot and set to medium heat.
  5. When the vapo-valve begins to ‘click’, open pot and stir mixture to break beef mince apart so that it isn’t clumped together. Place lid back on pot, and allow to cook on medium heat until your vapo-valve begins to click again.
  6. When vapo-valve starts to click, reduce heat to a low temperature and leave it to simmer for 10 minutes. Do not remove the lid during this time to allow the heat to remain consistent.
  7. After 10 minutes, add the remaining bok choy to your pot. Replace the lid and cook on medium heat for a further 5 minutes.
  8. Stir soup and serve with rice.
