(Filipino Beef Stew)

Our Saladmaster version of this Filipino classic will leave you amazed at how quickly and easily you can whip up a healthy and hearty meal for your family!

Recipe Description:

This Saladmaster version of the traditional Filipino Kare Kare transforms a beloved classic into an easy, healthy, and delicious family meal. Made with tender beef rump, vibrant vegetables like eggplant, Bok choy, and pumpkin, this dish is rich in nutrients. The beef provides a good source of protein and iron, essential for muscle health and energy, while the diverse array of vegetables offers fibre, vitamins, and minerals that support overall well-being. Kare Kare is a fantastically flexible recipe, in which you can use whatever vegetables you like. I have included my personal favourites and their quantities in this recipe, but feel free to play around and figure out your own preferences!  One thing to note is that the pumpkin plays an important role in this dish, as it softens and combines with the sauce to create Kare Kare’s characteristic creamy and comforting texture.

Utensils Used:
Ingredients:
  • 500g Beef rump
  • Two medium sized onions, roughly chopped
  • Large handful of beans
  • Eggplant
  • 1 bunch Bok choy, washed with ends removed
  • ¼ Kent pumpkin (can use any pumpkin variety)
  • 2 packets Mama Sitas Kare kare packet mix (can be purchased at most Asian grocery stores)
  • 2 cups water (to add to roasting pot)
  • 2 heaped tbs Crunchy Peanut Butter
  • Rice, to serve
  • Shrimp paste, to serve (optional, according to preference).
Method:
  1. Preheat MP5 to 195°C. 
  2. Cut beef into 2 inch chunks. Place beef, onion and 1 cup water into the preheated MP5. Place lid on opt and increase temperature to 200° When vapo-valve clicks, reduce temperature to 120°C. Allow to cook for a further 30-40 minutes (the longer it cooks, the softer the meat will be).
  3. Slice beans and eggplant into 2 inch chunks. Cut pumpkin into pieces half an inch thick.
  4. Preheat your large Saladmaster Roasting Pot to medium heat. Place 2 cups water in the pot. Add cooked beef with all liquid into your large roasting pot, and mix until well combined with water.
  5. Add seasoning, pumpkin, eggplant and beans to the roasting pot. Place the lid on and cook on medium heat until the vapo-valve clicks.
  6. When vapo-valve clicks, remove the lid and add peanut butter to the pot. Mix until well combined. Place bok choy on top of other ingredients and put lid back onto the pot to continue cooking.
  7. When vapo-valve begins to click again, turn off the heat. Your food is ready!
